Every year, when ripe plums begin appearing at the market, I am reminded of how little a good fruit really needs.

This homemade Greek plum jam is exactly the kind of recipe I love: fresh seasonal fruit, sugar, a little lemon and patience. No added pectin, no spices and no complicated ingredients to hide the natural flavor of the plums.

The result is gorgeous: a deep ruby-red jam with a glossy syrup and soft pieces of fruit that still remind you exactly what went into the pot.

In Greece, homemade jams and fruit preserves have long been a practical way of enjoying seasonal produce beyond its short harvest. And although every household has its own proportions and little secrets, simplicity is often what makes them special.

Traditional Greek Plum Jam – A Simple Homemade Taste of Early Αutumn

Ingredients
For approximately 2 medium jars:

  • 1 kg (2.2 lb) fresh ripe plums, weighed after removing the pits
  • 650 g (3¼ cups) granulated sugar
  • 40 ml (about 2½ tbsp) fresh lemon juice
  • 50–80 ml water, only if necessary

How to Make Homemade Plum Jam

Wash the plums thoroughly. Cut them in half, remove the pits and cut each half into 2–3 pieces. Do not peel them — the skins contribute beautiful color, flavor and texture.

Place the plums and sugar in a wide saucepan. Stir gently, cover and leave for 2–3 hours, or refrigerate for several hours. During this time, the fruit will begin releasing its natural juices.

If your plums are particularly firm and have released very little liquid, add a small amount of water. With juicy ripe plums, you may not need any.

Place the saucepan over medium heat and bring to a boil. Reduce the heat enough to maintain a steady simmer and cook, stirring regularly to prevent the jam from sticking.

As the fruit softens, gently press some pieces with a wooden spoon, but don’t completely mash them. I like my plum jam to retain visible pieces of fruit rather than becoming a smooth purée.

Towards the end of cooking, add the fresh lemon juice.

Instead of relying only on cooking time, check the consistency. Place a small plate in the freezer beforehand. Spoon a little hot jam onto the cold plate, wait briefly and run your finger through it. If the line remains separated rather than immediately flowing back together, the jam is ready.

Remember that it will thicken considerably as it cools, so don’t overcook it.

Transfer the hot jam to clean jars. For long-term room-temperature storage, use properly sterilized jars and a tested home-canning method. Otherwise, refrigerate the jam once cooled and consume it promptly.

Extra Tips

  • Choose ripe, flavorful plums, but avoid fruit that is excessively soft or damaged.
  • A wide saucepan helps moisture evaporate more efficiently and preserves a fresher fruit flavor than prolonged cooking in a narrow pot.
  • Keep the skins on. They help create that wonderful red-purple color and give the finished jam character.
  • And resist the temptation to add too many flavors. Cinnamon, vanilla or alcohol can be delicious in other versions, but sometimes I simply want my plum jam to taste unmistakably of plums.
  • Serve it on fresh country bread or toast, with butter or a mild creamy cheese. It is also wonderful spooned over Greek yogurt or alongside simple cakes and breakfast pastries.

Nutritional Value

Fresh plums naturally provide dietary fiber, vitamin C, potassium and various plant compounds, including polyphenols. Keeping the skins in the jam preserves more of the whole fruit than peeling would.

However, jam is different nutritionally from eating a fresh plum. It contains added sugar, and cooking changes some heat-sensitive nutrients. For that reason, I prefer to think of homemade plum jam as a delicious preserve to enjoy in moderate portions, rather than as a substitute for fresh fruit.

Plums contain fiber and naturally occurring sorbitol, both associated with normal digestive function. The evidence commonly discussed for bowel regularity, however, is stronger for whole and especially dried plums than for sweetened jam.

You can experiment with sweetness for a refrigerated jam, but changing the sugar affects texture, setting and preservation. For shelf-stable canning, always follow a tested recipe rather than altering ingredient ratios.
