Some dishes bring the warmth of a Greek family kitchen to the table. «Lahanodolmades», our traditional cabbage rolls with avgolemono sauce, are certainly among them.

Tender cabbage leaves wrapped around a fragrant filling of minced beef, rice and fresh herbs, slowly simmered and finished with a silky lemon-egg sauce. This is Greek comfort food at its best.

Cabbage rolls are especially popular during the colder months and often appear on festive family tables. Although stuffed leaves are found throughout the Eastern Mediterranean and Balkans, the Greek avgolemono version has its own distinctive character.

Greek Cabbage Rolls with Avgolemono – Traditional Lahanodolmades

Ingredients (Serves 6)

For the cabbage rolls

  • 1 large cabbage (1.5–2 kg)
  • 500 g minced beef
  • 120 g Carolina or other medium-grain rice
  • 1 large onion, finely chopped
  • 3 spring onions, finely chopped
  • ½ bunch fresh dill, chopped
  • ½ bunch fresh parsley, chopped
  • 60 ml extra virgin olive oil
  • Salt and freshly ground black pepper

For cooking

  • 30–40 ml extra virgin olive oil
  • 700–800 ml hot water or mild stock, as needed

For the avgolemono

  • 2 eggs
  • Juice of 2 lemons
  • 350–400 ml warm cooking broth

Method

Prepare the cabbage

Remove the hard core from the cabbage using a sharp knife.

Place the whole cabbage in a large pot of simmering water. As the outer leaves soften, carefully remove them with tongs.

Drain and allow to cool. Trim the thick central ribs and divide particularly large leaves if necessary.

Reserve smaller or torn leaves for lining the cooking pot.

Make the filling

Combine the raw minced beef, rinsed and drained rice, onions, dill, parsley, olive oil, salt and pepper.

Mix gently until evenly combined. There is no need to precook the meat.

Place a generous tablespoon of filling near the base of each cabbage leaf. Fold in the sides and roll, leaving a little room for the rice to expand.

Cook the cabbage rolls

Line the bottom of a wide pot with the reserved cabbage leaves.

Arrange the rolls closely together, seam-side down.

Add the remaining olive oil and enough hot water or stock to reach approximately two-thirds of their height.

Place an inverted heatproof plate over the rolls to keep them in position.

Bring to a gentle simmer, cover and cook over low heat for 50–60 minutes, until the filling is thoroughly cooked and the rice tender.

Carefully remove the plate and reserve 350–400 ml cooking broth.

Prepare the avgolemono

Beat the eggs until smooth. Gradually whisk in the lemon juice.

Slowly add the warm cooking broth, one ladle at a time, whisking constantly to temper the eggs.

Pour the sauce over the cabbage rolls and gently shake the pot to distribute it.

Do not bring the sauce to a boil.

Cover and rest for 10–15 minutes before serving.

Tips

  • Choose a loose-leaved cabbage whenever possible. Its leaves are easier to separate and roll.
  • Avoid wrapping the filling too tightly. The rice needs space to expand.
  • Keep the cooking temperature low and steady. Vigorous boiling can break the delicate rolls.
  • For a naturally silky avgolemono, temper the eggs patiently. No flour or cornstarch is necessary.

What to Serve with Lahanodolmades

Warm country bread and extra lemon are wonderful accompaniments. A simple green salad also works beautifully.

For wine, I recommend a crisp, dry Greek white, such as Moschofilero or Assyrtiko, whose acidity complements the lemon sauce.

Nutritional Value and Health Benefits

Approximate values per serving:

  • Calories: 450–500 kcal
  • Protein: 24–28 g
  • Carbohydrates: 28–35 g
  • Fat: 26–32 g
  • Fiber: 5–7 g

Values depend on the beef’s fat content, cabbage consumed and cooking liquid retained.

Beef supplies complete protein, iron, zinc and vitamin B12. Cabbage contributes fiber, vitamin C and vitamin K, while herbs provide additional plant compounds.

Together, these ingredients make a nourishing, protein-rich meal. Choosing lean beef and moderate salt helps keep it balanced.

FAQ

  1. Can I use another type of rice?

Medium-grain rice works best. Carolina rice is an excellent choice.

  1. Why did my avgolemono curdle?

The rice should be tender and the minced beef thoroughly cooked, reaching 71°C (160°F) in the centre.

  1. Are Greek cabbage rolls gluten-free?
