Some traditional Greek recipes surprise me with their simplicity and extraordinary flavor. Volos-style beef salmi, or Voliotiko Salmi, is one of those unforgettable dishes!

I recently prepared this traditional beef stew from Volos, in Thessaly, and the result was absolutely wonderful.

The beef was so tender that it practically melted in my mouth. The sauce was thick, rich and pleasantly spicy, with a deep flavor from red wine, tomatoes and aromatic allspice.

And when I served it with crispy homemade French fries, the combination was simply irresistible!

What Makes Volos-Style Salmi Special?

Unlike many Greek beef stews, traditional Volos-style salmi contains no onions or garlic.

Its distinctive character comes from slowly cooked beef, red wine, tomato sauce and whole allspice berries.

The recipe belongs to the culinary heritage of Volos. Older versions were also prepared with vergadi, young goat meat, while beef is used in more recent preparations.

Traditional Volos-Style Beef Salmi Recipe (Servings 4–5)

Ingredients

  • 1 kg beef shoulder or chuck, cut into medium pieces
  • 1 level tbsp all-purpose flour
  • 100 ml extra virgin olive oil
  • 300 ml dry red wine
  • 400 ml crushed tomatoes
  • 1 tsp whole allspice berries
  • 1–2 bay leaves (optional)
  • Salt and freshly ground black pepper
  • Hot water, as needed

For serving: Homemade French fries.

Instructions

  1. Prepare the beef.
Pat the meat dry with kitchen paper. Season with salt and pepper, sprinkle lightly with flour and shake off the excess.
  2. Brown the meat.
Heat the olive oil in a wide, heavy-bottomed saucepan. Brown the beef in batches until nicely colored on all sides.
  3. Add the wine.
Return all the beef to the saucepan. Pour in the red wine, add the allspice berries and optional bay leaves, and bring to a vigorous simmer for 1–2 minutes.
  4. Add the tomatoes.
Stir in the crushed tomatoes and cook for another 3–4 minutes.
  5. Simmer gently.
Add enough hot water to almost cover the meat. Cover and cook over low heat for approximately 1½–2 hours, or until the beef is exceptionally tender. Check occasionally and add a little hot water if necessary.
  6. Thicken the sauce.
Remove the lid toward the end of cooking if needed. Allow the sauce to reduce until thick, glossy and beautifully concentrated. Remove the whole spices before serving.
  7. Serve.
Arrange the beef on warm plates, spoon over the rich sauce and accompany with freshly fried potatoes.

Tips for Perfect Beef Salmi

  • Choose the right beef cut.
Shoulder or chuck becomes beautifully tender during slow cooking.
  • Brown the meat properly.
This develops a deeper, richer flavor.
  • Use a flavorful dry red wine.
It gives the sauce its distinctive character.
  • Keep the heat low.
Gentle simmering helps the beef become tender without drying out.
  • Don’t add onions or garlic.
Their absence is part of this particular traditional preparation.
  • Let the sauce reduce naturally.
The final result should be thick enough to coat the meat.

My favorite tip? Serve the French fries immediately, while still wonderfully crispy!

What to Serve with Beef Salmi

For appetizers, I recommend roasted Florina peppers, Kalamata olives or grilled mushrooms.

A refreshing Greek cabbage and carrot salad balances the rich sauce beautifully. A simple green salad with lemon and olive oil is another excellent choice.

Wine pairing:
Try a Greek Xinomavro or a Xinomavro–Syrah blend. Their structure complements the richness of the beef and tomato sauce.

For a non-alcoholic option, sparkling water with lemon is refreshing.
