Politika Easter Cookies (Traditional Recipe)

Ingredients

  • 900 g – 1 kg all-purpose flour
  • 250 g fresh butter
  • 200 g sugar
  • 3 eggs
  • 120 ml milk
  • 1 teaspoon baking powder
  • ½ teaspoon ground mastic
  • 1 teaspoon ground mahlepi
  • 1 teaspoon orange blossom water or 1 tablespoon cognac
  • zest of 1 orange
  • 1 pinch of salt

For brushing

  • 1 beaten egg
  • sesame seeds

Instructions

  1. Cream the butter and sugar

In a bowl, beat the butter with the sugar until light and fluffy.

  1. Add the eggs

Add the eggs one at a time, mixing well after each addition.

  1. Flavor the mixture

Add:

  • mastic
  • mahlepi
  • orange blossom water or cognac
  • orange zest
  1. Add milk and flour

Pour in the milk and gradually add the flour mixed with baking powder until a soft dough forms.

  1. Shape & bake

Shape the dough into braids or traditional cookie shapes, brush with beaten egg, sprinkle with sesame seeds, and bake at 180°C (340–350°F) for about 20–25 minutes until golden.
